NO JOKE! HAPPY APRIL!

HELLO FRIENDS! WE LOVE THAT SPRING HAS SPRUNG! THERE ARE MANY SYMBOLS THIS MONTH ASSOCIATED WITH EASTER AND SPRING! AMONG THE MOST POPULAR ARE THE LOVELY DAFFODILS AND THOSE EASTER EGGS. THOSE DELICIOUS CHOCOLATE FILLED EGGS - YUM! THE EGG ALSO REPRESENTS FERTILITY AND THE MYSTERY OF LIFE NOT JUST CANDY- BUT WE KNOW THAT RIGHT? WE PERSONALLY LOVE THE CELEBRATIONS OF THE DAFFODIL AND THAT FEELING OF BRIGHTNESS. TO CELEBRATE ALL THINGS SPRING WE SHARE THIS DAFFODIL COCKTAIL! SIP-SIP-ENJOY!

2 oz gin or vodka
1 oz fresh, strained pineapple juice
.5 oz fresh, strained lime juice
.5 oz IPA simple syrup
pinch of salt

For the syrup, combine equal parts sugar and beer by weight (if you don't have a scale you can use a cup of each, but the sweetness will vary from batch to batch) and blend in a blender until combined.
For the cocktail, combine all in a cocktail shaker with ice, shake, pour, and serve. Garnish with orange blossoms if you're lucky enough to have access to any, or else add a dash of orange blossom water to the recipe. Still good without either if you can't find them! OR SIMPLY SERVE NEXT TO A BOQUET OF DAFFYS FOR THAT SPRING TOUCH!
Pro tip: If you're crunched for time and don't feel up to juicing a pineapple, I won't judge. Use the canned stuff, but reduce the amount to .75 oz.
